Ingredients

  • 4 oz Don Felipe Chorizo Rojo

  • 1-2 Tbsps olive oil

  • 1/2 cup red onion, diced

  • 1 clove garlic,

  • minced

  • 5 tsps all-purpose flour

  • 1/2 cup Mexican lager beer, such a Negra Modelo

  • 1/4 cup chopped pickled jalapeño

  • 1 Tbsp jalapeno pickle juice

  • 3/4 cup milk

  • 4 oz Oaxaca or Monterey Jack cheese, shredded

  • 4 oz whole-milk mozzarella, shredded

  • 2 Tbsp cilantro, chopped 1/4 cup cotija, grated

Preparation

Step 1: Cook the chorizo in a cast iron pan according to package instructions. Remove with a slotted spoon and set aside.


Step 2: To the same pan, add the olive oil and heat over medium. Add the onions and cook until softened about 6 minutes. Add the garlic and cook until fragrant, about 30 seconds.


Step 3: Sprinkle in the flour and cook, stirring, until the flour is incorporated and golden, about 1 minute.


Step 4: Pour in the beer and whisk. Bring to a boil. Add the jalapeño and pickle juice and cook for 2 minutes.


Step 5: Gradually add the milk, whisking, and bring to a gentle boil. Whisk for 1-2 minutes until it starts to thicken.


Step 6: Reduce heat to low and add the cheeses until melted about 3 minutes.


Step 7: Stir in the reserved chorizo. Transfer to a serving dish and top with cotija and chopped cilantro. Serve warm with chips or other dippers.
