Embark on a flavor-packed journey with our Vegan Chorizo Onion Bites! These quick and delightful appetizers combine spicy vegan chorizo, caramelized onions, and creamy goodness, all wrapped in a golden crescent roll crust. Perfect for any occasion, these bites prove that plant-based eating can be both bold and delicious. Let's make every bite count!

Ingredients

  • 2 cups chopped onion

  • 3 tbsps vegan butter

  • 8 oz. Don Felipe Chorizo (your choice!)

  • 8 oz. vegan cream cheese

  • 1/4 cups vegan mayonnaise

  • 1/3 cup vegan mozzarella cheese

  • 1/4 cup chopped chives

  • 2-8oz crescent roll dough

  • 16 button mushroom caps

Preparation

Step 1: Prepare Chorizo and Onions

  • Cook the chorizo according to package instructions and set it aside.


Step 2: Caramelize Onions and Prepare Filling

  • In a medium heat, melt butter and add onions. Season with salt and cook over medium-low heat for approximately 20 minutes until the onions are soft and caramelized.

  • In a medium bowl, combine cream cheese and mayo until smooth. Mix in mozzarella, caramelized onions, and chives. Fold in the cooked chorizo.


Step 3: Preheat Oven and Prepare Muffin Tins

  • Preheat the oven to 375°F.

  • Butter and flour two 12-cup mini muffin tins.

  • Pat each crescent roll into 12 squares (24 total). Gently place each square into a muffin cup, pushing down the center slightly to form a cup shape. Set aside.


Step 4: Assemble and Bake

  • Place mushrooms into a casserole dish.

  • Distribute the filling evenly among the muffin cups and mushrooms, using about 1-2 tablespoons of filling for each.

  • Bake the mushrooms for 20-25 minutes until they release moisture.

  • Bake the muffin tins for 9-10 minutes or until golden brown.

  • Serve warm and enjoy!
