Chorizo Avocado Rice Bowl

INGREDIENTS:

  • 8oz Don Felipe Tempeh Chorizo Blackbean or Chickpea Blend  
  • 2 tbs of your favorite cooking oil  
  • 1 cup hot cooked brown or white rice
  • 1/4 cup crumbled queso cheese
  • 3 or 4 grape or cherry tomatoes, halved
  • 1 to 2 tablespoons chopped red onion
  • Salsa, and/or sour cream, optional, for serving

           


          DIRECTIONS:

          1. Thaw Tempeh Chorizo over night in your refrigerator.

          2. Once thawed, saute Tempeh Chorizo in a pre-oiled pan or skillet over medium heat for about 3 minutes until thoroughly heated.

          3. Pile the rice in a bowl, and top with the chorizo, queso, avocado, tomatoes, and red onions. Add salsa or sour cream if desired.
