Kate’s Fully Loaded Nachos

Whether you’re into the Super Bowl for the football or the commercials, there’s one thing all viewers can agree on — the food! Marketing Director, Kate Laubernds, and her husband are in each camp. He’s in it for football and she’s more of a basketball fan, but she tunes in for all the entertaining commercials. The two come together and are unanimous on the menu though! Smoked chicken wings and nachos, chips and dip. Kate is queen of Super Bowl nachos and makes a big batch every year.




  • 16 oz bag of tortilla chips

  • 4 c. of shredded cheddar cheese or mix of cheddar, pepper jack, or Colby jack

  • 1 lb. Don Felipe Chorizo Rojo, cooked

  • 1 15 oz. can black beans, drained and rinsed

  • ½ small red onion, diced

  • ½ pint of cherry tomatoes, cut in half

  • 1 large hass avocado, cubed

  • ¼ c. pickled jalapeños

  • Guacamole and salsa optional



  1. Preheat the oven to 350 degrees. Coat a 9x13 baking sheet with non stick cooking spray. Spread chips out in a single layer over the baking sheet.

  2. Top the chips with 2 cups of cheese. Sprinkle chorizo and beans evenly. Top with remaining shredded cheese.

  3. Bake for 5-7 minutes, or until the cheese is fully melted. Remove from the oven and top with remaining ingredients and a dollop of guacamole and salsa. Enjoy!
